My mom and dad are in town this weekend. Yesterday we took the kiddos down to Kansas City's farmer's market. I love spending Saturday mornings there. There is such a great array of fruits, vegetables and flowers to choose from. I picked some fresh veggies to prepare this recipe. I have made it for years and modify it to use summer squash and zucchini in addition to the peppers. My dad loves it too so we enjoyed it for a nice summertime lunch.
